A cake that is covered in fondant has a satin-smooth finish, with an outer shell that lends itself nicely to royal icing work or different decorations. The design possibilities are tremendous: rolled fondant can easily be tinted after mixing, or even painted. It is difficult to describe what a typical rolled fondant cake looks like. Because of the radical difference in cake styles created by innumerable talents in the pastry field, there are no “norms”, only great examples of artistry and skill. With its low fat and moisture content, fondant-covered cakes can be held without refrigeration much longer than butter cream. As a result, a fondant cake is an ideal choice where heat or humidity might be a factor at your reception. Also, many people feel that the airtight seal of the fondant coating helps to keep the cake within as moist as the day it was baked.
